Unlike many of its contemporaries at the time, Redbreast persevered through the American Prohibition and has now become one of the only Irish Whiskeys to date that still uses the Single Pot Still method of whiskey making.
Created from a mash of malted and unmalted barley, and triple distilled in copper pot stills, this uniquely Irish (and quintessentially Redbreast) way of making whiskey imparts a rich, silky texture to the liquid, emboldened by distinctive pot still spices. For more than a century Redbreast has stayed true to this whiskey making tradition. A living legacy. Safeguarded and nurtured under the watchful eye of our Master Blenders at the Midleton Distillery for almost 200 years.
Through long maturation periods, from 12 to 27 years plus depending on our product, Redbreast is matured in a combination of bourbon and sherry casks. Our sherry casks hail from Jerez de la Frontera in Spain and bring through Redbreasts’s signature sherry taste for a sweet yet complex drinking experience. Our bourbon barrels are made from American white oak, manufactured in Kentucky, and enhance our pot still spice and vanilla sweetness. It is the art and artistry of our Master Blender David McCabe who blends thee casks and flavours together from around the world into a whiskey that is distinctly Redbreast.
