My passion for quality products, taste, and, above all, the art of exceptional service. To do this, I like to interact with the team in the kitchen, in the dining room and with the sommelier, because everyone should be able to express their creativity and personality. I am convinced that each member helps create an unforgettable gastronomic experience for our guests.
I fell in love with the place, and its history, in 2015, then left after several years to enrich myself with other experiences. In 2023, my return to the Saint-James and my collaboration with Chef Mathieu Martin felt like an obvious next step. Together, we are writing a new page in the history of the property, inspired by a major renovation project, where an unprecedented gastronomic adventure awaits.
