What is your background? And what about your career path as a sommelier?

I am from Chile and I grew up in Vina del mar, located very close to Casablance Vallery, so wine was always on the table. I learned to appreciate wine from a young age and travelling enabled me to try wine from all over the world. This opened up my eyes to the vast world of wine

What wine and food pairings do you think go best together during winter months?

We tend to eat heavier dishes in winter, so if you prefer white wine try Semillon, white blends or Chardonnay. For reds, Cabernet Sauvignon and a Rhone Style Blend is always a great choice.
