NOBORIOJI HOTEL NARA ET RESTAURANT LE BOIS, Nara, Japan
9 rooms and 4 suites - 40 seats


Renovated in 2022, Noborioji Hotel Nara is ideally located in the heart of the historic district of Nara, just a few minutes walk away from the traditional monuments of Japan's ancient imperial capital. Not far from the city park where tame deer wander peacefully, it appeals to music, design and nature lovers alike. The contemporary glass and steel building houses 9 rooms and 4 suites, all of which are bright and elegant. Just behind it stands the elegant silhouette of Kōfuku-ji, one of Japan's oldest temples and a landmark of this fascinating World Heritage city. Like the other temples, you’ll be able to explore it with Noborioji Hotel Nara staff on private morning or evening tours upon request. Music lovers will enjoy evenings with a classical live concert at Le Bois restaurant, where chef Hiroshi Nakamichi offers the best pairings of Japanese cuisine where refined innovative French cuisine using local ingredients from Nara is offered. In the morning, guests can have a choice of Japanese breakfast.

PEPE VIEIRA RESTAURANTE & HOTEL, Pontevedra, Spain

Located on the edge of the ocean, just on the western tip of Europe, Pepe Vieira Restaurante & Hotel promises a spectacular culinary experience for thrill-seeking gourmets. During an interactive dinner, you can visit the restaurant’s kitchens, which has been awarded two stars and a green star in the 2023 Michelin guide. Chef Xosé T. Cannas invites you to move around the room, an elegant glass bubble set in the middle of nature. He boldly interprets techniques and uses ancestral local produce, rediscovered through research with historians, scientists and anthropologists. His creativity in imagining new dishes that exude the essence of Galicia seems limitless ! You can extend the adventure at the Pepe Vieira Restaurante & Hotel by spending a night in one of the galpones nestled under the vegetation. Their large windows and strikingly natural design will give you the impression of spending a night under the stars.

TRIBUTARY HOTEL ET RESTAURANT ŌKTA, McMinnville, USA

The Willamette Valley is considered by wine experts to be the new Napa and Tributary Hotel is now its gateway. Winery owners Shaun Kajiwara and Katie Jackson were inspired by the region to create this boutique hotel in a century-old industrial building. Its eight suites are both cosy and bright, making it the perfect stopover for those wishing to discover this new wine eldorado. The house is also home to a fine dining restaurant, ōkta, whose innovative chef, Matthew Lightner, has made a name for himself far beyond Oregon's borders. From breakfast to dinner, the owners' nearby farm based on the concept of regenerative agriculture, supplies the kitchen. In the heart of the small town of McMinnville, Tributary Hotel is much more than a charming boutique hotel.

RESTAURANT LA MERISE, Laubach, France

On the edge of the Vosges natural park, in the picturesque Alsatian countryside, La Merise reconciles refinement and simplicity, technique and taste. The restaurant, awarded 2 stars in the Michelin 2022 guide, will appeal to gourmets in search of sincere cuisine, allowing local products to express themselves. In the heart of the charming village of Laubach, thirty minutes away from Strasbourg, Christelle and Cédric Deckert welcome their guests in a place that they dreamed of and designed themselves. Their love for nature and their terroir shows everywhere. The majestic 600m2 building, made of half-timbering and Vosges sandstone, is entirely composed of old materials from the region. The sommelier showcases and gives pride of place to local wines. Most of the fruit served on the menu comes from the orchard which holds 60 trees, and the aromatic herbs from the garden cultivated by the chef, whose cuisine is often enhanced by notes of hay. Finally, La Merise now has three beehives and produces its own honey.

HELGUERA PALACIO BOUTIQUE & ANTIQUE, Las Presillas, Spain

The Cantabrian countryside is the setting for Helguera Palacio Boutique & Antique, a 17th century palace which has now become an adults-only hotel. History buff, the interior designer and owner has given the property a unique soul. Some of the carefully sourced antiques on display are available for sale. Inspired by a historical figure from Spanish or English nobility, the rooms and suites all offer a breathtaking view of the Pasiegos valleys, the bucolic treasure of the Santander region. Its meadows lined with low stone walls invite you to take time and simply contemplate, unless you’d rather cycle through them. With its majestic fireplace and partially covered swimming pool, the wellness area, which is entirely open to the landscape, will make you forget all about time. Your taste buds will also travel with the creative cuisine of Helguera Palacio Boutique & Antique's chef, Renzo Orbegoso Hinojosa, who favours fresh, seasonal and local produce.

The ninth floor of Antwerp's Museum of historical culture is home to masterpieces of a very special kind. This is where self-taught chef Viki Geunes has established Zilte, his 3-star Michelin restaurant awarded in the 2021 guide. Enjoy a moment of discovery and emotions, with a breathtaking view of the harbour the city of Antwerp. The scents of the sea are omnipresent at Zilte, which literally means « iodic » the taste and smell of the sea in Dutch. Viki Geunes makes a point of working with local fishermen, market gardeners and craftsmen, which adds an extra soul to his creative and sensitive cuisine. He is constantly exploring the limits of culinary constructions and is now pursuing his quest for the perfect balance between heritage, innovation and transmission within the family. His wife and their daughter ensure the comfort of their guests in the warm and intimate atmosphere of the room, harmoniously decorated with natural tones, wood and velvet.
