Graduated from the Alberghiero “Saffi” institute in Florence in 1984 as a “dining room - bar” manager. In 1985, he trained as a sommelier at the AIS and began his work at the Enoteca Pinchiorri, first as sommelier in 1988 then as restaurant manager from 1995. 2001: best sommelier in Italy (L'Espresso) 2014: BIWA award for best sommelier in Italy.
Champagne: in victory one deserves it, in defeat one needs it.
I love wines that reflect their terroir and help you to know it better, wines that have their own, sincere identity, which sets them apart from others through small, sometimes imperceptible details. I love wines that mature like myself… slowly, and which give us memories, emotions and states of mind, ever so slowly. I do not have a favourite wine, but I love many.
