The walls of a 500-year-old flour mill are home today to a delightful family hotel where you can enjoy total peace troubled only by birdsong and the sound of the brook rippling through the grounds. The garden, lovely pool and spa are all invitations in themselves to take it easy in this peaceful ambiance. However, it would be a pity not to explore the Guadalajara area: the historic city of Sigüenza, mediaeval villages, natural reserves, salt mines and rivers in canyons – each more beautiful and interesting than the last. At nightfall, the mill restaurant serves Slow Food cuisine inspired by traditional recipes produced from seasonal, local ingredients.

Our commitments

The Hotel make daily use of its fully restored 15th-century mill to demonstrate to their guests how they used to grind local varieties of flour. These are destined for the rustic breads which Molino’s chef Samuel Moreno bakes on site. The restaurant serves seven types of whole wheat bread—all homemade—and based on crops cultivated by a local organic farmer.
Flour varieties include wheats, spelt, and rye, and the hotel uses its own sourdough technique rather than industrial yeast. Breadmaking follows the methods described in the “Respectus Panis” guide produced by the French-founded Ambassadeurs du Pain—an international association of bakers. These creations don’t just please guests’ taste buds, they’re also easier to digest—a characteristic of ancient flour varieties that is helping bring about a renaissance in artisan breadmaking. 
The hotel is proud to play its part in this movement, something that allows it to promote the cultivation of traditional cereals, support local organic agriculture, and local producers that—quite naturally—bring a uniquely Spanish touch to this ancient art.

Tradition in a rural setting

Discover our traditions. Juan Moreno will explain the history of the mill and show you the mechanism in action. He will take you on a tour of the orchard and greenhouses where all the produce used in our dishes is grown. Depending on the season, he will take you truffle or mushroom hunting.

Starlight Reserve – Stars under the Siguënza sky

The Sierra Norte of Guadalajara is a region boasting one of the most beautiful night skies in Spain due to its lack of both air and light pollution. Since January 2022, our skies have been classified as a Starlight Reserve. At El Molino de Alcuneza, we have a Starlight guide who will explain to you what is observable in the night sky depending on the weather. He will teach you to find your bearings, recognize the major stars and constellations, locate the visible planets and the Milky Way, and a whole lot more. During this engaging hour-long discussion, you’ll explore the night sky with the naked eye, binoculars, and a telescope.

Enjoy the local cuisine and regional artisanal products. Visit our store and try our local specialities. The workshops of Sigüenza's artisans are well worth a visit: bee keepers, bookmakers, painters and engravers. Finish with a guided tour of the medieval centre in the company of a local historian.
