At Herdade da Malhadinha Nova, its vineyards are nurtured alongside vegetable gardens, and olive trees coexist with beehives. Chef Joachim Koerper draws on the rich biodiversity of the estate to create finessed cuisine that’s rooted in the Alentejo region. At the table, oils, honeys and seasonal vegetables speak of the terroir, with understated elegance and honesty.
