Since I opened my restaurant in Utsunomiya, I have always wanted to focus on local products (not only food, but also tableware, furniture, art and more) so that our guests can feel the whole beauty of the region. For me, it is important to connect to your roots, and I admire the way French cuisine maintains its traditions while also adopting great culinary practices from all over the world. Japan, itself, offers many techniques in the fermentation and ageing of food, the heirs of ancestral wisdom.
