Influenced by his culinary adventures in the land of the rising sun, the triple-star chef Kyle Connaughton has made the Japanese omotenashi philosophy his own: a sense of hospitality that gives his guests the satisfaction of a unique experience and the wonderful feeling of being invited in person to enjoy it in all the ways in which it is exceptional.
From his restaurant overlooking the vineyards of Sonoma County, the chef has created a dialog with the land of the neighboring organic farm, managed by his wife Katina. Together, they study flavors borrowed from Japan, combine ingredients so rare that they go to the trouble of growing them on their own land, and capture the best that each season offers them. It is this unique marriage, this deep connection with nature and this attention to the minutest detail that gives this farm-to-table experience such an original flavor.
