Masque Restaurant, Mumbai, India
Housed in a former textile factory in Mumbai, Masque restaurant is run by young chef Varun Totlani. Having explored different Indian terroirs and immersed himself in the contrasts between local tastes and traditions, he has unearthed a treasure trove of indigenous cuisine. The richness and diversity of ancestral cooking styles, combined with contemporary culinary techniques, has helped shape his modern interpretation of Indian gastronomy – an approach that saw Masque named Best Restaurant in India in Asia's 50 Best Restaurants guide for 2022.
As part of a profound dedication to sustainability, the restaurant is supplied only by local farmers and producers.
This blend of old and new can also be experienced through the property’s approach to drinks as well as food: start with a cocktail inspired by Ayurvedic philosophy in the Living Room, the restaurant’s cozy bar. The Masque Lab is also available for private events.
MV Evolve, Galápagos, Ecuador (first cruises in January 2023)
The MV Evolve is a new boat that joins the Ecoventura cruise collection and which is set to travel through the Galapagos, a natural archipelago listed as a UNESCO World Heritage Site. The vessel is Rainforest Alliance Best Practices-certified, recognizing Ecoventura's participation in social action programs and in protecting the region's unique biodiversity. Admire flora and fauna, led by a naturalist guide, or viewed from the large panoramic windows of your cabin. The celebration of nature continues in the restaurant, where the chef gives pride of place to organic produce from local farmers spread across the archipelago.
La Nauve Hôtel & Jardin, Cognac, France (opening Easter 2023)
A four-hectare park comprising vegetable garden, a vast stone fishery, two dovecotes and French-style formal gardens make for a bucolic setting at La Nauve Hôtel & Jardin. A former 19th century distillery in Cognac, this charming hotel has direct access to The Charente river, allowing guests to reach the center of town by boat. Enjoying the silence, soaking up the poetry of the place and staying in the comfort of one of its rooms or suites of this house. The architecture honors local materials, notable in the impressive double spiral staircase rendered in Avy stone.
