“At El Silencio we are all about the environment. We cultivate all the vegetables for the restaurant in our greenhouse, using only organic products; and the rainbow trout come from one of the on-site fish farms. We also buy local produce from nearby farms. Plastic is frowned upon, and waste is recycled directly at the property. We are in the final stages of building our own hydroelectric plant to provide all the electricity we need. To minimise the carbon footprint of their trip, we invite our guests to plant indigenous trees prior to leaving. Most of our staff reside in the village and are highly dependent on us.
