The Jury consisting of, among others, celebrity chefs like Annie Féolde, Dominique Crenn, Virgilio Martinez, based their ranking upon the completion of the signature dish of each participant.
This competition, open to chefs under 30 years of age, followed the 5 golden rules set out: choice of ingredient, ability to work with raw materials while preserving original tastes, contemporary and innovative style, dish presentation as well as the message of latter.
Marcin prepared herring in fisherman style with cucumber, dill, horseradish, and young herbs. A true reference to the regional cuisine that he knows very well, this signature dish was made with local, seasonal and typical products from northern Poland. Marcin was among the three finalists in this competition and was the only European representative. This is a huge success for Poland and for the Tri-city (Gdansk, Sopot and Gdynia). It is also a victory for the Polish cuisine and it’s promotion on a global scale.
For Marcin Popielarz, this competition and the fact that he was among the 3 finalists are the fruits of unremitting and passionate work. Relais & Châteaux is proud to have a chef who is one of the most promising in the world of gastronomy.
