Formerly the living quarters of Baron de Selys de Fanson, the kitchen and dining areas have retained their original décor, adding to the chic atmosphere that is reflected in the service provided by the team. It is a place that blends nostalgia with contemporary cuisine, devised by the Chef de Cuisine and his talented crew, using ingredients that are locally sourced and harvested from the estate gardens. When weather permitting, the outdoor terrace is a lovely setting for lunch, dinner or light bites.

In the former cellars of Château St. Gerlach, the raw minerality of its stone and time-worn wood surrounds have created an exceptional and evocative space. Treatment rooms, constructed beneath these ancestral arches, surround the central element: a swimming pool inspired by Roman baths, with a bay window that opens onto an outdoor terrace and nature itself. A sauna and Turkish hammam complete the experience, in a locale that celebrates the environment and heritage of the estate.

The St. Gerlach Estate is tucked away in the Geul Valley and the Ingendael nature reserve. Extensive parks, a vineyard, herb garden, orchard, rose garden, and its church with splendid 18th century frescoes, secure an enchanting setting for the Château, which dates back to the year 1200 and was once a monastery built to accommodate pilgrims who had come to pay homage to hermit Gerlach of Houthem. The guestrooms, housed in the former farmstead, boast views of Baroque gardens. The restaurant, which has lost nothing of its aristocratic décor, serves fine French cuisine, while the bistro Burgemeester Quicx offers the guests a more informal setting.
