The chef, Yannick Alléno, wishes to provide visitors with a unique experience, as illustrated by his signature dish: “Air pigeon: poultry puffed and roasted in hell’s fire, ortolon-style beak cooked in a cloth”. Each part of the meal is used throughout the meal, up to a terrine of confit legs to take away at the end of the meal.
