Chef Uchiyama proposes an innovative vision of "kaseiki" cuisine, a traditional meal composed of small dishes prepared in a way that is similar to that of Western cuisine. Matsumoto's cuisine is inspired by modern art in order to highlight what distinguishes it from other culinary traditions in Japan.
