Creative cooking

Cooking is synonymous with passion, whimsy, rhythm and pace, and just like notes on a stave, it can often result in some spectacular melodies. There's an underlying structure to my creative process. I start by assessing whether a dish's ingredients are capable of creating a sensuous harmony, with sweet and sour yet well-balanced notes intertwining like a melody.   The pretty little herb garden at the entrance sets the tone as soon as guests arrive. The atmosphere is warm and welcoming, like a family. The chef embarks on a refined and complex creative process, working with his team to produce elegant, evocative dishes that can sometimes be stunningly original. The results are unique, hearty dishes that bring together the very best ingredients the sea and land have to offer. The extensive wine list gives pride of place to sparkling wines.

In the small town of Brusciano, about fifteen kilometres from Naples, take a seat under the shade of Vesuvius and embark on a generous culinary journey at Taverna Estia. Michelin-starred chef Francesco Sposito has been offering a modern and inventive cuisine inspired by traditional recipes from Campania since 2005. You will quickly be seduced by his unique interpretation of Neapolitan classics or by dishes like his fettuccine with pink shrimp tartare, accompanied by a wine specially chosen by his brother Mario Sposito, the restaurant’s sommelier and maître de maison. With its exposed beams, central fireplace and hundreds of bottles of wine covering its walls, the dining room is the perfect setting for all of the pleasures that await.
