"As a chef, I have a clear idea of our land and what it can offer us. This is how I create tomorrow's cuisine, all while constantly focussing on the quality of the produce I use. I think Italy offers beautiful ingredients from north to south, and that we have a great diversity of produce which is coveted all over the world. Our mission is therefore to highlight Italy's flavours while respecting the produce and the quality. "

At the Arnolfo, a love of good food is a family affair. In a Medieval palace in his native Tuscany, Gaetano Trovato revisits the traditional with a modern cuisine based on local, organic products.
Gaetano Trovato takes pride in supporting new farming ventures developing in his region. Daily, he sources his kitchen from the new generation of local, environmentally aware farmers. It is a close relationship, and he encourages them not only to grow specific organic products but to prioritise quality. But his quest for excellence goes further, and he teaches at the Alma National School of Italian Cuisine, passing on his culinary knowledge and experience. He also takes part in charity dinners, supporting organisations that support the disadvantaged. This is a Chef with a taste for helping others.
