Norcia, the town of St. Benedict, nestling in the National Park of the Sibillini Mountains, is the Italian capital of the black truffle. The Palazzo Seneca tells the story of this region from the 16th century onwards, and the Bianconi family can look back on a glorious, more than 160 year-old tradition of hospitality. The best Umbrian artisans worked on the detailed refurbishing of the property and used unique materials and decorative objects to create perfect harmony between colours and lights, tradition and design. The fragrances of the herb garden and the quality of the local products delight in the restaurant Vespasia.
Vespasia's philosophy is built on the principles of "Salus Per Cibum".
The aim of this movement is to put the human being, the local community, a quality healthy nutrition, respect for the environment and the animals in the center of development.
It means enhancing the best local producers who work according to a serious scientific discipline, then spread the culture of good and healthy among the local population and consumers. Vespasia restaurant collaborates with virtuous producers Salus Per Cibum to grow together.
The project Salus Per Cibum organizes cultural encounters with kids and their parents in schools, promotes cooking lessons and visits to “Salus Per Cibum” active companies. "Salus per Cibum" is a movement without borders, open to those who share a vision of a “healthy” future”.
