Using cuisine to restore the pleasure of eating to women suffering from breast cancer.

To rediscover the very real pleasure of eating, nothing beats a few cooking sessions using the freshest, most natural products. The fragrant wisps from pots simmering on the fire, opulent and generous fruit that bring their delicate flavours to exceptional pastries ... This Estate shows its commitment by organising workshops dedicated to women with breast cancer, to give them the keys to this delightful world, and help them rekindle the pleasure of food. To these events are added twice a year a partnership with l’Établissement Français du Sang, the French Blood organisation in which donors can taste dishes from the area.

The Domaine d’Auriac is built on the ancient Carsac oppidum, where the story of Carcassonne, a Unesco World Heritage site, begins. For three generations, the Rigaudis Family has reinvented this 19th-century townhouse, built over the cellars of a Carolingian Abbey – ruled over by calm and fine dining in the shade of the 300-year-old surrounding park. The restaurant at the Domaine serves the original recipe for the typical local “Dieu le Fils” cassoulet. In a region where history, mysteries and legends, such as the story of Abbot Saunière’s treasure in Rennes-le-Château, abound, discover Cathare abbeys and castles whose ruins rise from cliff tops and rocky promontories.

Get off the motorway and leave the GPS behind! To fully appreciate the landscapes and heritage of Cathar country, fans of Slow Living can stick to traveling on minor roads. We have created an itinerary full of charm, taking in the Cathar castles of Quéribus and Peyrepertuse, also known as "vertigo citadels". Stop off at Cucugnan on the way, the picturesque village made famous by writer Alphonse Daudet in "Les Lettres de mon Moulin". Don't miss the bakery belonging to Monsieur Feuillas and if the mood takes you, join one of the classes run by the École du Pain…

In praise of slowness

Cut across the garden to the golf course in the early hours. Only a few meters separate you from hole number 1. Boasting spectacular views of the Pyrénées, take to the 18-hole golf course on the estate alone or accompanied, on foot or in a buggy. Once on the plateau, take a moment to appreciate that this is where the neolithic site of Carsac was located and the history of Carcassonne unfolded. End your tour by taking some refreshment on the terrace at Bistrot d’Auriac or stopping for lunch or dinner.
