A culinary journey

A sizeable vegetable garden, covering an area of just over half an acre, is managed according to the principles of biodynamics and permaculture; this is the playground of the market gardener of the Hostellerie de Levernois, who tends these plots to the rhythm of the seasons. Among 200 varieties cultivated here, you will see many directly on your plate, including raspberries, tomatoes, Asian mesclun, Alpine strawberries, and even Sichuan pepper. To meet the market gardener, cross the orchard of old varieties via the five hives and enjoy a sensory journey through aromatic plants with intoxicating scents: you'll find yourself in the vegetable garden. The objective here: that there is a constants 'osmosis' between the kitchen and the garden, and that the two nourish each other.

A journey to the heart of cheese

At Hostellerie de Levernois, the cheese trolley is something of an institution, courtesy of the owner’s passion for the art of maturation. Whether made with goat, sheep or cow’s milk, around 50 perfectly matured cheeses await, including the exceptional 36- or 48-month-aged Comté from Fort Saint-Antoine. A real tour de force of tradition and taste, where each cheese is chosen for its unique character and balance of flavors–it would be a shame to miss out on this temptation.
