Our chefs day starts with a walk through the garden accompanied by our gardener. Together they decide which vegetables, fruits and herbs are to be used on tonight’s menu. Using fish from the sea just a few miles away, beef and lamb from one of Ireland’s best know meat producing counties and Irish cheese, famous the world over we know what a privilege it is for us to live here and have such wonderful produce in our garden and so near to our home, simple food that is so fresh it speaks for itself.
