Chickweed is an edible plant with very small leaves and a thin stem. Its scientific name is Stellaria media, the “stellar intermediary,” but its common name comes from the fact that birds like its seeds. Its leaves have a mineral, slightly acidic flavor, while the stem is somewhat bitter. It grows in the vineyards of the Wagram region, and we pick it ourselves. We use it in cold starters and in pasta, fish and vegetable dishes. For example, one of the offerings on our menu is a grilled wild char filet served with a salad of mixed herbs, including clover and chickweed, and marinated avocado with lemon and walnut oil.
