In the center of old Quebec City, between the Saint Lawrence River and Place Royale, a property steeped in history awaits. Built in 1686, the vaulted cellars of the Leber and Charest houses, among the oldest buildings in the city, now house a gourmet restaurant which puts La Belle Province firmly on the map of traveling foodies. Welcome to La Tanière³, the experimental and sensorial retreat of chef François-Emmanuel Nicol. Fully devoted to promoting this region, he cooks exclusively with local, seasonal ingredients. No imported products can be found on the menu–with the exception of wine, only Quebec and Canadian terroirs are honored on the plate. The chef enjoys experimenting with little-known local produce, such as caviar from Lake Saint-Pierre, cherry bark, native plants from Quebec and even Pawpaw, a fruit native to North America with a taste reminiscent of mango. Two distinct dining experiences are offered at the La Tanière³ restaurant: one in an elegant dining room surrounded by captivating decor, the other at the Comptoir-Chef, with a front row seat to observe the kitchen at full steam. In both cases, a chef’s choice tasting menu, accompanied by wine, transports guests to the heart of Quebec’s unique terroir, offering a rich and aromatic palette.
