Proud of his homeland’s past and exceptional environment, Chef Sergio Diaz is committed to putting Guatemalan gastronomy in the spotlight. The cuisine he serves at the Sublime restaurant is born of his meticulous research carried out with help from anthropologist Jocelyn Degollado. Together, they identified milestones in the evolution of this civilization and ingredients from pre-Hispanic times to today to craft dishes that capture Guatemalan history in twelve chapters or stages. The dishes – with fascinating names like Lake Peten Itzá, Tak'alik Ab'aj, Uaxaxtun, Quiriguá, Tikal, and Itzapa Port – are nods to moments and places that have helped shape the very soul of the country, such as archaeological sites, landscapes, and ports. This committed and ambitious philosophy led to Sublime’s earning a place among the world’s finest restaurants.
