Through an immersive experience in his team, he shares an exceptional moment with his day students that will show them the inner workings of a fine dining restaurant. Raising awareness about healthy and sustainable cuisine is a challenge, but it also gives a sense of pride and daily commitment. What better than bringing back vegetables that were used in the past, discovering little-known fish or even highlighting the best local producers inspired by the Champagne and Hauts-de-France regions?
