After some three decades and an equal number of stars in the Michelin Guide for the Relais & Châteaux property Le Clos des Sens in Annecy, Laurent Petit returns to his homeland of Haute-Marne to open Le Clos Vauban in Langres: The chef wanted to at last place the Grand-Est region in the gastronomic spotlight. On the ramparts of Europe’s largest fortified enclosure, Laurent and Martine Petit acquired an historic residence surrounded by an herb and vegetable garden. They continue their devotion to passing on their savoir-faire by working hand-in-hand with the chef, Valentin Loison, and the head sommelier – his partner –, Anaïs Bercegeay, the maîtres de maison, a collaboration that first began at Le Clos des Sens. It is the terroir’s essence that is the inspiration for the chef who composes dishes rooted in the local land. A particularly poetic, delicate cuisine is served amid the intimate surrounds of Bulle d'Osier, while more accessible interpretations are on the menu in Mirabelle's dining room. All dishes are complemented by a choice selection of accomplished wines, from Champagne to Burgundy, from Jura to Alsace. Promising a meaningful and rejuvenating stay, Le Clos Vauban offers a handful of rooms and suites, all personalized in their Haussmannian home.

Visiting Saint-Mammès Cathedral

Constructed between 1150 and 1196 and listed as a national historic monument, this majestic cathedral harmoniously blends a variety of artistic and architectural influences: Romanesque decor and scale, Gothic vaults and a neo-classical façade, rebuilt in 1768. The shimmering 19th-century roof of glazed tiles, Renaissance works, tapestries and the magnificent 18th-century pipe organ also number among its many notable features.

A walk along the ramparts

Perfectly preserved, the fortified ramparts of Langres form a two-mile enclosure, making for a pleasant immersion in the history of the Middle Ages and the Renaissance. The walk along the ramparts also offers breathtaking views of the surrounding plains. You will come across seven imposing towers as well as remarkable gates, and you can also explore underground passages beneath the fortifications. Views of the beautiful historic buildings in the city center add the final touch to your stroll.

A cycling tour around Lake Liez

The circuit that follows the banks of Lake Liez offers a mostly flat route that makes for a very pleasant excursion for cyclists of all ages and abilities. Enjoy delightful panoramas that mix water, forest and countryside, picturesque in every season. In summer, you can swim in the lake, or practice paddleboarding and sailing. To cover the 10-mile route, allow four hours on foot or two hours by mountain bike.
