Creative cooking

A story of cooking, a story of men. In 2015, I asked Glenn Viel to join me as head of the kitchens at the Oustau de Baumanière. First and foremost, it was his cooking that captivated me. True and simple, it respects local products from the terroir. It's also unpretentious, which is how I perceive my own cooking to be. A kitchen in which superfluous frills don't hide the essentials. He brings youth and creativity to the table while preserving the traditional spirit of Baumanière. I also like the man. He possesses a simple straightforward character, with no fuss or pretenses. He is from Brittany, which may explain this.

Discover the flavours of Provence

"I invite you to discover the organic vegetable patch of Baumanière les Baux de Provence with a nutritionist, who will reveal to you the treasures of our land and invite you to taste a selection of local organic produce. You can take the experience one step further with my "Vegetable Menu", which features certain products grown in my organic vegetable garden, and by visiting the Moulin du Castellas, a Les Baux Valley olive oil mill near the hotel run by a friend of ours."

"Wine has a predominant place in the history of Baumanière. Thanks to the passion my grandfather developed for wine over the years, and which I inherited, we are proud to have a collection of over 50,000 bottles. I invite you to share my passion for vineyards and discover the L’Affectif rosé and red wines that I created in collaboration with the Domaine de Lauzières winery, as well as the L’Invitation white and rosé wines created with the Domain de Fontchêne. In order to prolong these pleasures of the terroir, you will also be able to discover the Moulin de Castelas oil mill, our friendly producer of olive oil in the Valley of Baux, which is located near the hotel. ”
