As the seasons change, my menus invite you to sample flavours that may be new to you: little-known garden plants such as angelica, rocambole garlic, and borage and nasturtium flowers; foraged herbs, fruit and flowers such as shepherd’s thyme, marsh mint, wild medlar fruit, mushrooms from the undergrowth and elderflower, not forgetting a delicately flavoured spice - grains of paradise - that had been overlooked for five centuries until I rediscovered it and reintroduced it into French cuisine.
