Fast alle unsere Zutaten stammen aus Anbau und Zucht in Togichi und spiegeln das Wesen der vier Jahreszeiten wider. Zu den lokalen Spezialitäten gehören Yuba und Kanpyo, die überwiegend in der traditionell japanischen Küche verwendet werden, aber es ist sehr aufregend, ein Gericht mit diesen Zutaten zu entwickeln, um etwas Unerwartetes zu schaffen.“
