My restaurant is the perfect place for gourmands, is the outcome of the evolution of a family that has been engaged in the restaurant trade for five generations, through knowledge handed down from parents to childrens for 200 years and with a permanent avant-garde vocation. Every day I am looking to research, perfection and results. In the last 20 years I have never missed a service: I think that most of our guests travel for visiting us for long distances, they come to enjoy a unique food experience, I can't betray them!

You have to go back to 1815 to find the first Vivalda at the helm of this typical Italian restaurant whose reputation has been handed down from generation to generation for more than 200 years. Chef Gian Piero Vivalda is heir to this tradition. His cuisine, which is deeply rooted in the Piedmont region, draws on the very best of local ingredients: game and vegetables and herbs from the cottage garden, for traditional recipes such as foie gras with Madernassa pears and ravioli with ceps and white Alba truffles during the season, to which he gives a modern twist. The sense of family and the authentic ambiance of this historic property add to its charm.

The region is showcased in the cuisine offered at this property where homegrown produce guarantees the extreme freshness of the dishes.
Traditional Piedmont cuisine is the invention of modest people who gathered the ingredients for their daily meals from nature. The chef draws his inspiration from this simple approach while making the most of the delicious local ingredients sourced from small neighbouring producers: Cherasco snails, white Alba truffles, Cervere leeks, potatoes and cheese from Cuneo Mountains, Carmagnola peppers. He thus contributes to maintaining local traditions and protecting certain varieties of vegetables and meat like veals, goats, capons and rabbits.  And because he feels he can do more than just share his passion for food and flavour, families in need also receive food through a local charity.
